Name:                  Lactobacillus brevis (bacterium)

Habitat:                white cabbage, sauerkraut, pickled cucumbers, gut, etc.

Appearance:         gram-positive rods

Way of life:           lactic acid fermentation

Characteristic:     produces sauerkraut: the starting product is white cabbage, and the interaction of many microorganisms (e.g. yeasts, acetic acid bacteria and lactic acid bacteria) produces sauerkraut after some time. Due to the many bacteria, Sauerkraut is very healthy in moderation, it has few calories and contains many healthy nutrients and antioxidants and it is good for digestion. According to some studies, it can even prevent cancer.
